Banquets came upstairs this evening and I got to watch them make quenelles out of fish tartar again. They take sushi grade fish and put it through a grinder, add some chilies, oil, salt and pepper and you have salmon tartar. Above tuna tartar was served on a Chinese soup spoon with wasabi and below the salmon tartar was on bread with pesto:
